I didn't realize coffee flour was so unknown, it's been at my local grocer for over a year. It's generally recommend to substitute up to 1/3 the flour in a recipe.
@Jefromi I wasn't thinking about that explicitly, but that may not be a bad idea actually. If you bake the flour just as you'd bake dough normally, and bake water+salt+yeast just as you'd bake dough normally, and then combine then, you'd have done the exact same thing to all the ingredients that you do when baking bread, except you definitely wouldn't have bread because it was done in the wrong order.
