That is an amazing idea.... I think @Joe has a point about the smoke not penetrating though, so I may have to order an extra rack urgently... It is a Kamado, so it doesn't have a broiling option either...
Thanks for your comment, I guess I didn't make it clear, but this is only for the duration of finishing breakfast. I have found that if I make the hollandaise sauce last, the other breakfast items go cold :-/
