Is is more than 0.1% of the population?” — No, it’s probably orders of magnitude less (of people who use their own homemade garlic oil, stored for long time). That’s the problem with back-of-the-envelope risk assessments: if your assumptions are wrong, your results will be wildly off. The risk of botulism from this particular preparation is still low, but it’s not tiny, and a careful person should certainly not neglect it. | |
