Nov 19, 2016 at 23:50 comment added Joe @JasonSchock : This is the reason that some folks say to put oil in the water -- it makes it more difficult for bubbles to form, decreasing the chance of boil over. Of course, this doesn't actually answer the question of why. For how to prevent, the correct place to put this is cooking.stackexchange.com/q/46384/67 .
