Speaking as someone who cares for a hemiplegic with arthritis in the working side, in our case, we have found that it's better to keep the number of contraptions to a minimum, and as simple and generally useful as possible. A clamp for holding items still is one such.

I wondered so much about the question, because I have never had my food getting flinged, and only after reading this answer and your comment, did I realize that this is the way I have always opened them, and that other ways (beside a can opener) are possible at all.
