For a more crusty shortcrust pastry topping, try placing one layer of pastry over pie, then egg wash the top, and add another layer of pastry, and then egg wash it. | |

And while I understand that some faux pot pie use bread crumbs as the top "crust", I don't that's what the OP is talking about. Specifically when the OP says that she wants the crust to be crunchy rather than flaky(how normal pastry crusted pot pies are). | |
