Feb 2, 2017 at 9:37 comment added rackandboneman "cheapo Japanese" (unless $40+ is cheap, or you are talking 11cm sizes) are different in materials from true modern or japanese chef knives. Either you got Thai Knives (Kiwi/KomKom), or really low end japanese brands (Sekiryu/Sekizo/TokioKitchenWare etc...) that look like tradititional japanese but are made of a much softer steel. Still, these being sharper than conservative western knives is plausible.
