May 19, 2015 at 17:54 | comment | added | Athanasius | It is true that acidification processes CAN be used to make garlic infusions safe, but the process must be thoroughly tested to ensure adequate acidity. There is a now an approved procedure involving citric acid for consumers which I discussed in an answer to a related question. However, just tossing whole cloves in vinegar for a couple days may NOT guarantee safety, since the acidity level may not be high enough and/or the acid may not penetrate the garlic sufficiently. | |
